In true standing with southern tradition, every year (since well before I can remember) my grandmother would make cabbage, pork, and black-eyed peas for dinner on New Year’s day.
This was my interpretation: corned beef hash with pancetta and carmelized cabbage.
I wish the colors were brighter, but it definitely brought back memories.

I was given some leftover empanadas that my friend’s mother made. He brought them back from his Christmas trip home and froze them. In the few years that I’ve known him, I’ve made it a personal mission to not only improve his mother’s empanadas, but to uncover an appropriate reheating method in which we preserve the original integrity of such a wonderful snacky treat. Just look at them in their little ziplock baggy…. little pockets of seasoned, meaty goodness.
